When I'm using Outlook Express, how do I delete unwanted incoming mail in one go without having to delete each message separately.

One of the advantages of Windows is that the same approach will work in many different applications.

To select the Whole List
Press down the Ctrl key and then A , this will highlight the whole list

To select a block of items in a list , click on the first item, then press and hold down the Shift key and click on the last item in the block you want to select. The whole list will then be highlighted and you can delete the lot.

To select individual items in a list , click on the first item, then press and hold down the Ctrl key and click on each item you want to select in the list keeping the Ctrl key held down. The items will then be highlighted and you can delete the lot.

This works for moving files such as Photos from one folder to another, for selecting files in a folder or for managing email inboxes.
