The editor’s mince pies

mincepiesMany years ago, a pre-Christmas edition of Blue Peter featured an idiot-proof recipe for mince pies, one that didn’t involve the tedious matter of making pastry; I was intrigued. I am to cookery what I suspect Fred Dibnah was to needlework so I gave it a go. The results were, though I say it myself, delicious so here’s the recipe:

  • Cut 2 discs of bread for each mince pie you want to make, one bigger than the other.
  • Coat the discs with melted butter.
  • Put the larger discs into a bun tray or greased tray and add mincemeat.
  • Dip lids in sugar and place on top of each pie.
  • Gas mark 6/200C for 10-15 minutes.

Eat pies soon after baking, preferably warm, and enjoy.
